Pumpkin Spice Buckwheat pancakes with a Maple Peanut Glaze


These pancakes are super moist and taste exactly like pumpkin pie, my favorite! Topping them with a sweet maple peanut glaze brought them to a whole new level of delicious!!

Serves 1. Makes about four 4-inch pancakes

For the pancakes, you will need:

  • 1/3 cup buckwheat flour
  • 1/4 cup pumpkin puree
  • 1/4 cup egg whites
  • 1/4 cup milk of choice 
    • (if you are vegan and don't want to use egg whites, you can just use 1/3 cup milk of choice + 1 flax egg)
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/2 tbsp sweetener of choice (I used coconut sugar)
Directions:

In a bowl, combine buckwheat flour, pumpkin pie spice, baking powder, and sugar and mix until combined. Add in the egg whites (or flax egg) and milk and stir until combined. If the mixture seems too thick, add more milk a little at a time until it smooths out slightly. You don't want it too runny, just smooth enough to pour and hold it's shape.

Heat a pan over medium, and coat with coconut oil or a non-stick spray. Pour about 1/4 cup of the batter into the pan and flatten out with the back of a spoon. Let cook until the top starts to bubble, then flip and cook until both sides are browned. Repeat with the rest of the batter and stack up tall on a plate!


For the Maple Peanut Glaze, you will need:
  • 1/2 tbsp slightly melted peanut butter (you want it to be runny so it's easier to mix)
  • 1 tbsp maple syrup
  • 1 tbsp peanut flour
  • water

Directions:

Stir the peanut butter, maple syrup, and peanut flour together in a small bowl. The mixture will be thick because the peanut flour absorbs the liquid, so add a tiny bit of water at a time and stir continuously until you get a smooth, pourable sauce.

    1. yes, 3 tablespoons of coconut flour for the pancakes :) (coconut flour is a lot more absorbent so you don't need as much)
